Green Curry with Eggplant and Duck
This amazing green curry is perfect for a quick weekend dinner. There are a lot of gluten free curry paste options that you can find in the asian market. To make it vegan, we used a can of full-fat coconut milk. For extra protein, we cooked duck on the side. But, you are more than welcome to add any protein of your choice. Adding Chicken/Beef will go well with this recipe as well as Tofu/Chickpeas if you want to make it vegetarian!
